Creamy Spinach Soup: Low Carb and Dairy Free
Lush green, velveteen and deeply nutritious, here’s a spinach soup that’s wonderfully warming and an excellent way to increase your intake of leafy greens. Cauliflower makes it creamy. Ground cloves and a grating of fresh nutmeg round out the flavour. And when you use a dense, gelatinous Bone Broth for the stock, it’s inherently healing.
Spinach Soup, Nutritious and Healing
I want Spinach Soup in early spring. Maybe it’s because the colour is symbolic of new growth, or because the leaves inspire me to start germinating seeds for the vegetable garden. Or perhaps, because spinach is a cool weather plant, it’s natural to want it when spring sunshine is cut through by cold wind, and when the evenings are still fresh. That time of the year when a steaming bowl of sustenance is still welcome because the heat and humidity of summer hasn’t yet set in.
A good homemade Bone Broth is the secret here, for both flavour and nutrition. If you already have the Bone Broth on hand, and if you buy a bag of pre-washed spinach, then this is like Fast Food Paleo. Put the cauliflower in a pot with the Bone Broth and ground cloves. Bring it to a boil then let it simmer for 10 minutes. Add the spinach in handfuls, and once wilted, whiz it with an immersion blender until it’s velvety smooth. To serve, add a dollop of yogurt or coconut cream, and grind a little nutmeg on top. It’s lovely, and because of the Bone Broth, it’s quite filling, so your second course can be quite light.

Creamy Spinach Soup
- immersion blender
- 500 grams cauliflower roughly chopped
- 2 cups Bone Broth (500 mls)
- 1 cup water
- 1/4 teaspoon ground cloves
- 1 teaspoon sea salt
- 250 grams spinach pre-washed
- yogurt or coconut cream optional, for serving
- nutmeg or mace (AIP) freshly ground, optional, for serving
- Place the cauliflower, Bone Broth, water, ground cloves and salt into a saucepan. Bring to a boil and simmer for 10 minutes.
- Add the spinach in handfuls, pressing down with a spoon until wilted.
- Whiz with an immersion blender until completely smooth.
- Serve and, if desired, add a dollop of yogurt or coconut cream and a dusting of freshly ground nutmeg (or mace for the Elimination Phase of the AIP).
