Chia Seed Pudding with Fresh Strawberries: Make it Mighty with Collagen

For a no-bake breakfast or snack, is anything easier than Chia Seed Pudding? Mix a few simple ingredients in a bowl and let it sit overnight: done. I tend to make Chia Seed Pudding in spring and summer when fresh berries are growing everywhere. This recipe calls for strawberries because we have so many of them, but substitute them with any that you have on hand. And be sure to add collagen powder to reinforce it with goodness.
Chia Seed Pudding with Fresh Strawberries
When you think of Chia Seed Pudding, do you immediately think of breakfast? Or an after-school snack for the kids? Or do you have it in the fridge as an easy dessert? Whenever you happen to serve it, remember the golden rule for good eating and great health, which is that our food should be low carbohydrate and should nourish us with complete protein and healthy fats.
Low carbohydrate is always important in order to keep our insulin production low. Complete protein, along with being necessary for everything that goes on in our bodies, rewards us with the feeling of satiety. And healthy fats are an excellent source of energy.
So, if we apply this to the art of making a healthy Chia Seed Pudding, then the choice of ingredients counts. In this case, strawberries are a good low-carb option. Coconut milk provides the healthy fats. But the protein? I’ve never tried adding egg or bone broth, but the ideas don’t excite me. Collagen powder, on the other hand, is brilliant as it dissolves quickly and easily.
I add one scoop for each person. I usually buy plain collagen as I can then play around with adding my own ingredients such as cacao or vanilla, but if you have a premixed blend then by all means give it a go. The important thing is to reinforce your Chia Seed Pudding with a complete range of amino acids so that it actively – and effortlessly – contributes to your health and healing.

Chia Seed Pudding with Strawberries
Ingredients
- 3 tablespoons Chia seeds
- 3/4 cup coconut milk
- 1/2 teaspoon vanilla essence
- 2 teaspoons muscovado sugar
- 1 cup strawberries diced into small pieces
- 2 tablespoons collagen powder optional
Instructions
- Put all the ingredients into a bowl and mix well.
- Pour into 2 serving bowls or jars.
- Refrigerate for several hours or overnight.
